Steam Whistle Ice Cream

Mix Crème Anglaise over a hot water bath until thick and creamy. Whisk in whipping cream and vanilla. Pan fry almonds, sugar and Steam Whistle beer until large clumps form. Then, in a small pot, add sugar and Steam Whistle Beer until a caramel forms. Then stir in cream and milk until mixture is not translucent. Mix the almonds into the ice cream and serve with a drizzle of caramel.

Yields 1.25 L


Ice Cream:

  • 12 Egg Yolks
  • 8oz (250 g) Sugar
  • 2 cup (500 ml) Milk
  • 1/2 cup (250 ml) Steam Whistle Beer
  • 1 tbsp (15 ml)Vanilla
  • 1 cup (250 ml) whipping Cream

Almond Mix:

  • 1 cup (250 ml) ground almonds
  • 1/2 cup (125 ml) Sugar
  • 1/4 cup (60ml) Steam Whistle Beer

Steam Whistle Caramel:

  • 500g sugar
  • 125g Steam Whistle Beer
  • 375mL Heavy Cream
  • 250mL Milk
