Steam Whistle - Do One Thing Really, Really Well

Steam Whistle's Big Game Chili

This recipe was created by James Foran, Steam Whistle's  Sales & Marketing Coordinator in BC. James is a big sports fan and had Grey Cup in mind when he developed this hearty meal.

Directions:

In a skillet or large pan brown ground beef and strain. Also cook stewing beef (ideally medium rare so it is not tough), flavour with seasoning salt and Steam Whistle (the beer will cook off/reduce).

 

Clean and chop green and red peppers and onion. Add to large stewing pot with butter and start to cook over medium heat. You'll want the vegetables to be cooked through but still with a bit of crunch (they will soften during when the chilli simmers over low heat). Flavour the peppers and onions with Steam Whistle Pilsner. Add in Tomato chunks, sauce and crushed tomatoes and both kinds of beans. Add all spices & 1 full bottle of Steam Whistle, stir in ground beef and stewing beef. I add in cinnamon as it cuts the acidity and adds a smooth subtle flavour to the chilli that pairs nicely with the beer and spices, can be omitted but I highly recommend it. Bring entire mixture to a boil and then reduce to low heat. Simmer on low head (uncovered as this will help it to thicken) for approx. 2 hours and this will really bring out the flavour, stirring occasionally. Remove Bay Leaves, serve and enjoy!

 

Serve with shredded/grated cheddar cheese, sour cream and oyster crackers.

 

Prep time is approximately 30 minutes, total time 2.5 hours, but very little work required once its simmering. This is just a guideline, you can have fun with it and add other vegetables (carrots, celery, different types of beans, etc). Spices and amounts are just suggestions, adjust to personal preference. Following this will have a bit of a kick, but not too spicy for most people.

 

 

Ingredients

1 pound lean ground beef

1 pound stewing beef

1 28oz can of tomato sauce

1 28oz can of crushed tomatoes

1 28oz can tomato chunks

1 28oz can of red kidney beans (rinsed)

1 28oz can of pinto beans

2 green peppers

2 red peppers

1 large onion

Seasoning salt (for the meat, add to personal taste)

2-3 Bay Leafs

1/8 tsp. Cayenne Pepper

1/2 tsp. Paprika

1 Tbsp. Chilli Powder (add more depending on how hot you want it)

1/2 tsp. garlic salt

1 tbsp. Worcestershire Sauce

Tabasco (add to personal taste)

2 bottles of Steam Whistle

*1/8-1/4 tsp. ground cinnamon (depending on personal preference)
