Dr J's Sweet & Smokey Steam Whistle Mango BBQ Sauce

Ready to host the BBQ of the summer?  This People's Choice Award winner from Peterborough Ribfest is the perfect addition. Sent to us by Chef Erik P. Hoflick, this party size recipe makes an incredible BBQ sauce with smokey poblano and sweet mango puree.  Not ready for a large party? Jar it and be stocked for the year or give it as a gifts.

Cook down the onions and garlic in a little olive oil. Add the Pilsner reduce by half. Next add the mango puree and poblanos and cook for a approx. 5 minutes. Add the rest of the ingredients and simmer on low for 45 minutes stirring every few minutes.


  • 1 large sweet Mayan Mexican onion minced
  • 20 cloves of garlic minced
  • 16 cups of ketchup
  • 3 cups of apple cider vinegar
  • 1 cup of maple syrup
  • 2 cups molasses
  • 2 cups brown sugar
  • 8 teaspoons seasoning salt
  • 4 tsp chili powder
  • 8 tsp of smoked paprika
  • 8 tsp of cumin
  • 4 tsp of ground black pepper
  • 4 cups of mango puree
  • 9 smoked poblano peppers ( sub fresh poblanos and a tablespoon of liquid smoke)
  • 60 oz. of Steam Whistle Pilsner reduced by half
