Steam Whistle Beer Braised Beef Short Ribs, Brown Butter Forked Red Potatoes Carmelized Brussel Sprouts and Reduced Braising Sauce


Pre Heat Oven to 400 F. Brown Short ribs in medium size roasting pan, add onion, carrot, celery, ginger, garlic and thyme. Once everything is lightly browned add beef broth, soy sauce, brown sugar, bay leaf and Steam Whistle beer. Bring to a boil on stove top and place covered in oven for 2 hours or untill tender. Remove Ribs from braising liquid, strain and reduce by half. Whisk butter into braising liquid to finish sauce.

Boil potatoes untill fork tender, strain and set aside. In a separate pan heat butter untill lightly browned. Then add to potatoes and lightly crush with a fork. Season with salt and pepper. Serve.


  • 3 to 4 Lbs Beef short ribs, cut into 3-inch pieces
  • 1 Tbsp Vegetable oil, for roasting the short ribs
  • 1 Small Onion, finely chopped
  • 1 Clove Garlic, finely chopped
  • 2 Tbsp Chopped fresh thyme
  • 1 Bay leaf
  • 1/4 Cup Packed brown sugar
  • 2 Tbsp Sodium Reduced soy sauce
  • 1 Bottle Steam Whistle beer
  • 1 Thumb Fresh Ginger Choppped
  • 2 Carrots Chopped
  • 2 Ribs Celery Chopped
  • 1 Litre Sodium Reduced Beef Broth
  • 1/2 Lbs Butter Cut into Cubes
